What makes Fudge grainy?
The truth is grainy Fudge can be caused by several things. It could be related to there not being enough liquid or fat to help the sugar dissolve. Perhaps your Fudge required a little more elbow grease and wasn’t beaten for long or hard enough. There are many possibilities as to why your homemade Fudge didn’t turn out quite the way you wanted it.
Why do you need to beat Fudge?
Sugar’s most comfortable position to exist in is crystal form. Beating takes the sugar crystals and stretches them and stops the sugar crystals reforming which will leave you with a much smoother texture.
Quick Tips for a smoother Homemade Fudge mixture
1. Add a teaspoon of cream to your Fudge. This will prevent the formation of crystals to a degree, however, you must be aware that this does not replace the beating process!
2. Adding a little bit of fondant to a completed Fudge can also help to reduce the amount of time you need to beat the Fudge to make it smooth. However, you must be aware that in our opinion, this gives the Fudge a much sweeter high note hence why we don’t add fondant to our recipe. Adding fondant does work though but make sure those eating it this way have a very sweet tooth!
3. Some people use an electric beater rather than hand beating. However, with this method, you need to be careful you don’t overbeat the Fudge as that in itself can create an even grainer texture on the tongue. That's why we hand beat everything, as well as the visual appearance, you can feel the changes in viscosity through your spatula and you get to know when the time is right to pour.
